Voted Austin's #1 Restaurant
Austin, TX

Under the same ownership for 47 years, Fonda San Miguel was the first to bring authentic Mexican flavors and dishes to the Tex-Mex state. This restaurant, serving 400 - 600 covers each night, wanted to elevate their cocktails to match the integrity of the food.

American Gastropub Concept
Glendale, Los Angeles

Chess Park

This full build-out restaurant wanted a cocktail program beyond anything that Glendale had seen before. Every neighborhood in Los Angeles has different tastes, so much time was spent understanding how to create exciting, new cocktails and flavor profiles to engage the Glendale clientele. The opening menu hosted cocktails that spanned from the familiar to the adventurous and bar sales consistently nearly equaled that of the kitchen. It quickly became voted as one of Glendale's best new openings by voters on OpenTable.

Here the cocktail menu focused on low-ABV cocktails to elevate the beverage options using the restaurant's beer and wine license. Each cocktail incorporated Japanese ingredients and flavor affinities that linked back to the cuisine.

Pasadena, Los Angeles

Mi Piace

A staple in Los Angeles dining with over 30 years of operation, Mi Piace has hired Ice & Alchemy multiple times for seasonal menu updates.  We create elevated cocktail recipes to compliment their existing menu of drinks. Flavor, balance, and presentation are the focus while developing engaging recipes for the Pasadena clientele. Cocktails need to be elegant in all aspects and executable for a 200+ seat restaurant.

OtoÑo

Spanish Concept
Highland Park, Los Angeles

When developing Otoño's cocktail program, regional Spanish spirits and flavors passed through the lens of American cocktail trends to create a merging of worlds. The recipes explored traditional and modern preparation and bar technique, Spanish and local ingredients, and had a focus on the often overlooked elegance of pairing the perfect gin with the perfect tonic water and aromatic botanicals. Elevated in-house prep included ingredients like sadas, bottled cocktails, sous-vide syrups, and more and was recognized as one of LA's top cocktail destinations of 2018 by Eater LA.

Skylight Gardens

Cali-Italian Concept
Westwood, Los Angeles

This family-owned 200+ seat concept was using the soda gun as their main tool for cocktails. They decided not to just update their program, but to become THE cocktail authority in Westwood and hold their own in the Los Angeles bar scene. With Ice & Alchemy's assistance, a bar redesign was done with all the proper fixings and ergonomics that fit the bartenders' needs like a glove. The cocktail menu included recipes ranging from simple to dynamic and the neighborhood's response was overwhelmingly positive. Over Ice and Alchemy's two year involvement, the restaurant doubled its revenue and established itself as the top cocktail destination in Westwood.

The House of Blues, Anaheim, LA

This 90+ seat concept within a concept hosted live music of its own and also connected directly to the VIP mezzanine of the main stage. Developing a cocktail program that could efficiently manage the ebb and flow of the bar during and between acts was a primary focus, as well as catering to the wide variety of palates for music goers within a 6 cocktail menu.

Los Balcones

Peruvian Concept
Hollywood, Los Angeles

This 70+ seat restaurant was looking to breathe new life into their cocktails and have ongoing management of their bar program. Regionalism played a large role when determining which spirits and flavors were to touch the new menu. Each recipe was created to exemplify Peruvian Pisco and tap into the flavors of Latin America and was recognized by Johnathan Gold as having an excellent Pisco Sour in his LA Times article.
